In general – Virgin olive oil is a natural product that has not had its characteristics altered in any way. It has been extracted naturally, without chemicals or other processing and the heat during pressing does not exceed 33 degrees celcius – protecting its quality.
It is virgin olive oil which has been used in medicinal studies which proved that the Cretan diet is the healthiest of all in the Meditteranean. During pressing -optimum procedures take place to ensure that all traces of elements and vitamins are retained in the oil.
Good olive oil should have a pleasant tase and smell. Concerning extra virgin oil – this should have a very low acidity level. International standards state that the acidity level should be between 0.1 and 1. Hence, if you choose virgin or extra virgin olive oil – you will know that you are purchasing a good quality olive oil.
